These energy bites were born from my need to use up my seemingly endless supply of almond milk pulp. The great thing about this recipe is it’s very adaptable; feel free to substitute the nuts and sweeteners for any/all of your personal favorites.
Almond Energy Bites with Matcha Green Tea and Cacao Nibs
- 1/2 cup almond milk pulp
- 6 dates
- 2 tablespoons nut butter (or 1 tablespoon almond milk and 1 tablespoon oats)
- 1 generous pinch salt
- 1/2 teaspoon cinnamon
- 1 tablespoon cacao nibs
- 2 tablespoons hemp hearts
- 1 tablespoon chia seeds
- 1/2 teaspoon matcha green tea powder
- 1 tablespoon coconut sugar
Place all ingredients into a food processor and blend until a soft dough forms, pausing to push down the sides periodically. Roll into bite-sized balls and roll in coconut flakes, bee pollen or additional coconut sugar. Refrigerate until firm and enjoy!
