Avocado Toast 4-Ways!

A few weeks ago I tried out SPUD toast kits and had way too much fun experimenting with one of my favorite breakfast combinations…eggs and avocado!

The basic toast kit includes avocados and eggs (obvs) as well as an assortment of organic ingredients, including fresh baked bread and locally made preserves and cheese.  I opted to add a few extra ingredients to accompany my kit and below are four of my favorite avocado toast kit combinations!

Chevre Scrambled Eggs with Garlic Scapes and Avocado

  • 1 slice toasted fresh bread
  • 1 egg
  • 1-2 teaspoons chevre cheese
  • 1 chopped garlic scape
  • 1 handful pea shoots
  • 1/2 sliced avocado
  • Fresh ground salt and pepper

In a small frying pan set over medium heat, scramble the egg and the chevre cheese until light and fluffy.  Place the desired amount of avocado slices on the toasted bread and top with the chevre scrambled eggs.  Season generously with salt and pepper and top with chopped garlic scapes and pea shoots…enjoy immediately!

Avocado Mash and Salt Cured Egg Yolks

  • 1 slice toasted fresh bread
  • 2 salt cured egg yolks
  • 1 tablespoon chopped cilantro
  • 1/2 mashed avocado
  • 1 pinch chili flakes
  • Fresh ground salt and pepper

Rinse the salt cured egg yolks to remove any excess salt and set aside until ready to use.  Spread a thin layer of avocado mash on the toasted bread and top with cilantro and the salt cured egg yolks. Garnish with chili flakes and season with salt and pepper to taste.  Roughly chop into the yolks and spread out evenly across the toast just before eating.

Poached Eggs with Avocado and Fresh Figs

  • 1 slice toasted fresh bread
  • 1 soft poached egg
  • 1-2 teaspoons strawberry preserve
  • 1 sliced fig
  • 1/2 sliced avocado
  • 1 pinch edible flower petals
  • 1 pinch bee pollen
  • Fresh ground salt and pepper

In a small pot set over high heat, poach the egg until the yolk is soft and remove from heat.  Spread a thin layer of strawberry preserve on the toast and top with avocado and fig slices and the soft poached egg.  Break the yolk and garnish with flower petals, bee pollen and fresh ground salt and pepper.

Chevre Whipped Strawberry Preserve with Avocado and Mint

  • 1 slice toasted fresh bread
  • 1/2 tablespoon chevre cheese
  • 1/2 tablespoon strawberry preserve
  • 1 teaspoon chopped fresh mint
  • 1 teaspoon toasted pine nuts
  • 1/2 sliced avocado
  • Fresh ground salt and pepper

In a small bowl, whip the chevre cheese and strawberry preserve until light and fluffy.  Spread the desired amount of whipped preserve on the toast and top with sliced avocado.  Garnish with mint, pine nuts and season with fresh ground salt and pepper.  Enjoy with fresh berries if you have them on hand!
