Avocado Toast with Garlic Aioli and Mixed Bean Sprouts

I have a new addiction to mixed bean sprouts from Eatmore Sprouts & Greens; made worse by the fact that they’re a family-run, certified organic farm out of BC — I’m officially hooked. I’ve been putting these crisp gems in my salads and smoothies or just pouring them directly from the package into my mouth.

These sprouts have recently worked their way onto my breakfast scene and I haven’t looked back.  If you love bean sprouts, you need to try this recipe…it’s not your ordinary avocado toast!

Avocado Toast with Garlic Aioli and Mixed Bean Sprouts

  • 1 English muffin
  • 1 ripe avocado
  • 1 red onion
  • 1 soft poached egg
  • 1-2 tablespoons mixed bean sprouts
  • 1/4 cup mayonnaise
  • 1/2 teaspoon minced garlic
  • 1/2 tablespoon lemon juice
  • 1 pinch smoked paprika
  • 1 pinch matcha powder
  • Fresh ground salt and pepper

Combine the mayonnaise, garlic and lemon juice in a small bowl and season with salt and pepper to taste. Cover and refrigerate until ready to use. Toast the English muffin and top with garlic aioli and a bed of thinly sliced avocado and red onion, followed by a soft poached egg. Garnish with mixed bean sprouts, paprika and matcha powder as desired.  Enjoy!
