After finding some beautiful fava beans at the Italian Centre Shop, I spent a solid week experimenting will all sorts of different recipes and prep techniques. My favorite recipe to come out of it was spicy marinated fava beans with fresh mint.
They’re delicious on their own, with fresh burrata or as an accompaniment to your charcuterie board!
Chili Garlic Marinated Fava Beans with Fresh Mint (adapted from Feasting at Home)
- 1 cup peeled fava beans
- 3 tablespoons rice vinegar
- 1 tablespoon lime juce
- 4 tablespoons olive oil
- 1 minced garlic clove
- 3 tablespoons minced fresh mint
- 1-2 teaspoons chili garlic sauce
- 1/2 teaspoon fresh ground salt and pepper
Place the peeled fava beans in a pot of boiling salted water and cook until tender. Drain the beans, rinse with cold water and transfer into a resealable container. Add the remaining ingredients and stir to thoroughly combine. Cover, refrigerate and allow to marinade overnight before serving. Enjoy immediately or keep refrigerated for up to a week.
