Gold Flake Vanilla Popcorn Balls with Cajun Roasted Pumpkin Seeds

Gold flakes make anything more sophisticated and these popcorn balls are no exception.  Whip up a batch of these stunners and impress everyone at your Halloween party this weekend!

Gold Flake Vanilla Popcorn Balls with Cajun Roasted Pumpkin Seeds (adapted from The Food Network)

  • 2 cups sugar
  • 1 1/3 cups water
  • 1/2 cup corn syrup
  • 1 teaspoon white vinegar
  • 1/2 teaspoon fresh ground sea salt
  • 1 teaspoon pure vanilla extract
  • 18 cups popped corn
  • 1/2 cup Cajun roasted pumpkin seeds
  • 1 pinch edible gold flakes
  • 1 pinch paprika
  • 1 bunch fresh mint

In a medium saucepan over high heat, stir together the sugar, water, syrup, vinegar, and salt. Bring to a boil until the mixture reaches 255 degrees on a candy thermometer. Remove from heat and stir in the vanilla. In a large bowl, slowly pour the mixture over the popped corn, tossing to evenly coat. With lightly greased hands, press the popcorn into 4-inch balls and sprinkle the tops with a generous amount of Cajun roasted pumpkin seeds.  Garnish with a pinch of salt, paprika and gold flakes, then set aside on waxed paper to harden.

When plating, garnish with additional paprika and fresh mint leaves. Enjoy!
