My Pinterest feed has been inundated with summer popsicle recipes over the last few weeks. After spotting a recipe for granola pops, I wanted to put my spin on things and take my breakfast to go!
For all the moms out there, I’m sure this would be a big hit with the little ones too…
Granola Breakfast Popsicles with Chia Seeds and Toasted Quinoa (adapted from The Fit Foodie)
- 1 1/3 cups granola
- 1/2 tablespoon chia seeds
- 1/2 tablespoon toasted quinoa
- 1 teaspoon cacao nibs (optional)
- 1 1/2 tablespoons agave syrup
- 2 cups vanilla Greek yogurt
Place the granola, chia seeds, toasted quinoa and agave syrup in a small bowl and stir to combine. Spoon the granola mixture into popsicle molds and pack firmly. Top up each mold with yogurt, insert popsicle sticks and freeze overnight or until set.
Remove from mold, top with fresh chopped mint and dried rose petals and enjoy immediately! If you want a more uniform popsicle, simply combine the yogurt and granola mixture before filling the molds.
If you prefer fudgesicles, try sprinkling a little cocoa powder into the yogurt!
