For the past few weeks I’ve been trying to get more creative with my leftover almond milk pulp and found it’s actually a pretty great way to thicken fresh smoothies.
Feel free to use fresh pulp (if you have it on hand) or pulp that’s been frozen into cubes, both work great in this recipe.
Green Smoothie with Blueberries and Almond Milk Pulp
- 1 handful fresh spinach
- 1 ripe banana
- 1/4 cup chopped cauliflower or broccoli
- 1/4 cup blueberries
- 1 teaspoon cinnamon
- 1 pinch fresh ground salt
- 1 tablespoon honey or syrup
- 1/2 cup almond milk
- 1/4 cup almond milk pulp
- 2-3 ice cubes
Combine all ingredients in a blender and blend on high until smooth and creamy. Add more almond milk to thin the consistency if desired. Garnish with fresh chopped mint and enjoy immediately!
