Healthy breakfast cookies make for the perfect breakfast on the go and they’re also a great way to use up ripe or frozen bananas.
They’re also very easy to experiment with, substitute the nuts, seeds, fruit and spices for different varieties to suit your taste. I’ve experimented with apples, blueberries, nutmeg, turmeric and walnuts in this recipe and I’m pretty sure you cant go wrong with any combination!
Healthy Beet Powder and Goji Berry Breakfast Cookies
- 1 mashed ripe banana
- 1 1/4 cup oats
- 1/2 cup cashew or almond butter
- 2 tablespoons pumpkin seeds
- 1 tablespoon chia seeds
- 1 tablespoon hemp hearts
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- 1/2 cup re-hydrated goji berries
- 2 teaspoons beetroot powder
- 2 1/2 tablespoons honey
Preheat oven to 325 degrees. Combine everything in a large bowl and stir until thoroughly combined. Scoop generous amounts of dough (heaping 1/4 cup) and place on a parchment paper lined baking sheet. Bake for 15-20 minutes or until lightly browned on the bottom. Remove from oven and allow to cool on a wire rack. Transfer to a resealable container and store in the refrigerator or at room temperature for up to a week.
