Holiday Glow Salad with Winter Squash and Citrus Vinaigrette

Last month I had the pleasure of partnering with Glow Juicery to develop some fresh salad and juice recipes to feature for the Christmas season. For the entire month of December, you can pick up my Holiday Citrus Glow Juice and Holiday Glow Salad at any Glow Juicery location across Canada!

Abundant, hearty and delicious winter squash was the inspiration for my Holiday Glow Salad. While there are numerous varieties on the market, I chose to work specifically with acorn squash for this dish. What I love about acorn squash is the sweet, nutty flavor and the fact that the entire squash is edible — flesh, seeds, skin and all! It’s an excellent variety of squash to work with if you’re looking to minimize food waste in your kitchen. This recipe also features spinach, quinoa and a hint of turmeric; all tied together with dried cranberries and toasted squash seeds! Hope you enjoy!

Winter Squash and Citrus Vinaigrette

  • 1 1/2 tablespoons rice vinegar
  • 1 tablespoon fresh squeezed orange juice
  • 2 tablespoons finely chopped raw acorn squash
  • 1/2 tablespoon honey
  • 1/4 teaspoon orange zest
  • 1 1/2 tablespoons oil
  • 1/4 teaspoon turmeric powder
  • 1 pinch cayenne pepper (optional)
  • Fresh ground salt and pepper

Combine all ingredients in a blender or food processor and blend until smooth. Transfer into a resealable container and refrigerate until ready to use.

Holiday Glow Salad with Winter Squash and Citrus Vinaigrette

  • 1/2 cup cooked quinoa
  • 1 cup roughly chopped spinach
  • 6 fresh peeled mandarin orange sections
  • 1-2 tablespoons winter squash and citrus vinaigrette
  • 1 tablespoon dried cranberries
  • 1 tablespoon toasted acorn squash seeds
  • Fresh ground salt and pepper

When plating, start with a bed of spinach, quinoa and orange sections. Drizzle with winter squash and citrus vinaigrette and top with cranberries and toasted squash seeds. Season with salt and pepper to taste.
