Homamade Mint Chocolate Chip Kefir Ice Cream

I’ve been making my own milk kefir for a few months now and having so much of it on hand has forced me to get creative in my uses!  Mint chocolate chip is my absolute favorite ice cream, so I think this combination was inevitable…

This recipe can be made without an ice cream maker, but it will require a little more work as you will have to vigorously stir the mixture every hour as it freezes.  Keep in mind that I don’t have a traditional Ice cream maker, a few years ago my mom bought me a Yonanas  fruit processor for Christmas and that’s what I use to make sorbet and ice cream — basically, it can turn anything frozen and cubed into soft serve!

Homamade Mint Chocolate Chip Kefir Ice Cream (adapted from Cultures for Health)

  • 2 eggs
  • 3/4 cup organic sugar
  • 2 cups fresh milk kefir
  • 1 cup heavy cream
  • 1 pinch sea salt
  • 1 – 2 teaspoons mint extract
  • 3 ounces dark chocolate chunks

In a medium-sized bowl, beat the eggs and slowly stir in sugar.  Add the kefir, cream, extract and chocolate. Pour the mixture into ice cube trays and allow to freeze overnight. Remove the cubes from the tray and process in your Yonanas; place the soft ice cream in a resealable container and freeze for 2 hours. Enjoy!

Note: if you don’t have a soft serve processor, simply pour the mixture into a resealable container and place in the freezer.  Vigorously stir every hour until solid and well combined.
