Jalapeno and Red Grape Slaw with Mint Yogurt Dressing

This is a wonderfully fresh and crunchy summer slaw, perfect as a side dish to a light meal or as a hearty topper on your barbecue pork bun. ┬áMake it before your last barbecue of the season, it won’t disappoint!

Jalapeno and Red Grape Slaw with Mint Yogurt Dressing (adapted from Feed Me Phoebe)

  • 1/2 head broccoli
  • 1/2 head green cabbage
  • 1 small bunch French radishes
  • 1 jalapeno
  • 1/2 cup sliced red grapes
  • 1/4 cup roughly chopped mint leaves
  • 1 tablespoon chopped cilantro
  • 2 tablespoons chopped green onions
  • 1/2 cup Greek yogurt
  • 1-2 teaspoons agave syrup
  • 1 tablespoon lemon juice
  • 2 tablespoons lime juice
  • 1/4 cup toasted slivered almonds or pine nuts
  • Fresh ground salt and pepper

Thinly slice the broccoli and cabbage and place into a large mixing bowl. Slice the radishes, jalapeno and grapes and add to the bowl. Gently toss to combine. In a small bowl, whisk together the mint, cilantro, green onions, yogurt, syrup and citrus juices. Pour over the slaw and toss to evenly coat. Season with salt and pepper to taste and top with toasted almonds or pine nuts.
