Freekeh Superfood Salad with Black Grapes and Cajun Crusted Pepitas

This is a well-balanced powerhouse salad.  It has full servings of fruit, vegetables, dark leafy greens and whole grains…not just any whole grains, amazing freekeh grains.  Freekeh has four times more fiber than brown rice and more protein than any other grain.  It’s rich in essential minerals, prebiotics and probiotics and sits very low in the glycemic index; giving you sustained energy throughout the day, while also making you feel full longer.

This super grain, combined with other superfoods such as pepitas, kale, black grapes and fresh ginger, make one seriously delicious antioxidant-packed salad…that I’m now in the habit of eating at least three times a week!

Cajun Pepitas

  • 1 cup pumpkin seeds
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon soy sauce
  • 1 tablespoon extra-virgin olive oil

In a small bowl, toss the pumpkin seeds with olive oil and soy sauce until evenly coated.  Stir in the spices and spread the seeds onto a baking sheet.  Bake at 300 degrees for about 25-30 minutes or until golden brown.

Sesame Ginger Vinaigrette

  • 2-3 tablespoons rice vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon sesame oil
  • 1 tablespoon honey
  • 1 1/2 teaspoons chili-garlic sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic
  • Fresh ground salt and pepper

Finely chop the garlic and add to a small bowl.  Whisk in the remaining ingredients and season with salt and pepper.  Add more grated ginger as desired, to taste.  Set aside to refrigerate.

Freekeh Superfood Salad with Black Grapes and Cajun Pepitas

  • 1 cup organic baby kale
  • 1 cup organic spring mix
  • 1/2 cup cooked freekeh
  • 1/4 cup chopped snap peas
  • 1/4 cup chopped black grapes
  • 1-2 tablespoons ginger vinaigrette
  • 1 tablespoon Cajun pumpkin seeds
  • Fresh ground salt and pepper

In a large bowl, toss the kale and spring greens with the ginger vinaigrette.  When plating, layer the salad starting with greens, cooked freekeh, snap peas, and black grapes.  Top with a handful of Cajun pepitas and season with fresh cracked pepper if desired.

Experiment with different fruits, such as blueberries and pomegranate seeds…or with different kinds of seeds and beans.  Crispy baked chickpeas are something I’m throwing in next time!
