This salad makes a great accompaniment to any barbecue and can easily be doubled or tripled based on the amount of people you’re serving. It’s refreshing and light with a surprising bit of heat; perfect for a warm summer night. What I love about this salad is the majority of it can be prepared the night before, with the freshest ingredients added just before serving. Try this when hosting your next outdoor party!
Mango and Lime Summer Salad with Marinated Red Onions
- 3 mangoes
- 1 cucumber
- 1 small red onion
- 1 jalapeno pepper (optional)
- 1 bunch fresh cilantro
- 1 bunch arugula
- 1 tablespoon fresh squeezed orange juice
- 1 tablespoon fresh squeezed lime juice
- 1/2 tablespoon extra-virgin olive oil
- 1/2 tablespoon liquid honey
- 1 pinch chili flakes
- Fresh ground salt and pepper
In a large serving bowl, combine the orange juice, lime juice, olive oil and honey; whisk vigorously until well combined. Roughly chop the mango and onion into bite-sized pieces and add to the bowl. Toss to completely coat and refrigerate overnight. Just prior to serving add the arugula, sliced cucumbers, minced jalapeno and finely chopped cilantro. Stir to evenly coat all ingredients and season with salt and pepper to taste.
When serving or plating, garnish with a pinch of chili flakes and an extra drizzle of honey if desired.
