Mango Rice Paper Rolls with Fresh Avocado and Honey Laced Tahini

I love salads…especially portable ones!  Being able to eat a full salad with no utensils or mess is a wonderful thing, especially if you’re pressed for time or on the move.  You can make any salad portable with the miracle of rice paper, so I’ve been having a lot of fun with it over the past few weeks.  My new favorite roll includes some fresh mango and avocado and I have to say that I’m actually excited to get home for lunch to eat these while walking my pup.  Give this combination a try and then have some fun experimenting!

Honey Laced Tahini

  • 2 tablespoons tahini
  • 1 tablespoon organic honey
  • 1 teaspoon rice vinegar
  • 1 pinch toasted sesame seeds
  • 1 splash soy sauce

In a small bowl, combine all ingredients and mix thoroughly.  Add additional tahini or soy sauce to taste.  Store in a seal-able container and refrigerate until needed.

Mango Rice Paper Rolls with Fresh Avocado and Honey Laced Tahini

  • Rice paper
  • Cooked glass noodles
  • 1 handful pea shoots
  • 1 bunch cilantro
  • 1 mango
  • 1 avocado
  • 1 bunch mint
  • 1 teaspoon chili flakes
  • 1 tablespoon honey laced tahini
  • 1 pinch toasted sesame seeds

Slice the mango, avocado and green onion into thin sections.  Fill a large bowl with warm tap water, dip the rice paper in the water and lay on a flat surface (double the rice paper for a sturdier roll).  Pile some glass noodles in the center of the rice paper, followed by a small handful of pea shoots and a few sprigs of cilantro.  Evenly pour on the tahini dressing.  Top with the desired amount of mango, avocado and mint, then sprinkle with chili flakes and toasted sesame seeds.  Bring one edge of the rice paper over the filling and compress tightly while gently rolling, fold the bottom in and finish rolling to seal the remaining edge.  Serve with additional tahini for dipping, as desired, and enjoy!

There should be enough sauce to serve with two rolls, but I generally double or triple the recipe to have it on hand all week.  Feel free to add grilled chicken, shrimp or tofu, both work perfectly with this combination of fruits and vegetables!
