Matcha Green Tea Dutch Baby Pancake with Fresh Fruit

My green tea obsession is still going strong and with this recipe I’m basically just turning my matcha lattes into food now.  No complaints here, I’m actually pretty happy I experimented with this recipe because this dutch baby pancake tasted as amazing as it looks!

I opted to pair my pancake with citrus and kiwi, since it’s what I had on hand, but feel free to top with any combination of fresh fruit you prefer!

Matcha Green Tea Dutch Baby Pancake with Fresh Fruit

  • 2 tablespoons oil
  • 3 eggs
  • 1/2 cup flour
  • 3/4 cup almond milk
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract (optional)
  • 2 teaspoons matcha powder
  • 1 pinch fresh ground salt
  • 1 sliced kiwi
  • 1 orange or pomelo
  • 2-3 mint leaves
  • 1 tablespoon syrup or honey
  • 1 tablespoon powdered sugar

Place an medium sized cast iron skillet in the oven and preheat the oven to 425 degrees.  In a blender, combine the eggs, flour, almond milk, sugar, vanilla, matcha and salt; blend until frothy.  Carefully remove the preheated skillet from the oven and evenly coat with the oil.  Pour the batter into the hot pan and place back in the oven for about 20 minutes, or until golden brown and puffed around the edges.  Remove the pan from the oven, garnish with syrup, powdered sugar, mint and the desired amount of fruit.  Enjoy right from the pan or slice and serve.
