I’m a pretty big fan of roasted radishes as it is, so I figured wrapping them in shaved prosciutto and drenching them in a citrus marinade couldn’t hurt!
If you’re looking for a meat-free option, simply omit the prosciutto all together or wrap the radishes in rice paper bacon before baking.
Roasted Prosciutto Wrapped Radishes with Citrus-Cilantro Dressing
- 6 organic radishes
- 3 strips prosciutto (halved lengthwise)
- 1/2 teaspoon honey or maple syrup
- 1/4 cup olive oil
- 2 tablespoons fresh squeezed lemon juice
- 1 teaspoon lemon zest
- 1 minced garlic clove
- 1 pinch cayenne pepper
- 1/2 tablespoon Dijon mustard
- 1/2 bunch chopped cilantro leaves
- Fresh ground salt and pepper
Preheat oven to 400 degrees. In a small bowl, whisk together the honey, oil, lemon juice, lemon zest, garlic, and mustard. Fold in the chopped cilantro and season to taste with cayenne, salt and pepper. Wrap each radish with a strip of prosciutto and secure with a toothpick or skewer. Season with salt and pepper and roast in the oven for 20 minutes or until the prosciutto is crispy and the radish is tender. Remove from the oven, drench in citrus-cilantro dressing and enjoy immediately!
