Spicy Watermelon Wedges with Citrus and Cilantro Yogurt

I’m one of those people who buys watermelon year-round…I love it that much. However, I do far more experimenting when summer rolls around and since we’re officially heading into the last long weekend of the season (*cries*) — I figured I would share one of my new favorite ways to enjoy watermelon.

This dish was inspired by a recent Instagram post by Bon Appetit Magazine, where they seasoned fresh watermelon with a chile spice blend. It looked amazing and I was instantly inspired to put my spin on it. Hope you enjoy!

Spicy Watermelon Wedges with Citrus and Cilantro Yogurt

  • 1 mini watermelon
  • 1/4 cup plain yogurt
  • 1/2 tablespoon fresh lemon juice
  • 1/2 tablespoon fresh lime juice
  • 1 bunch fresh cilantro
  • 1/2 teaspoon honey (optional)
  • 1 teaspoon fresh ground lime fresco sea salt
  • 1/2 teaspoon cayenne pepper
  • 1 pinch fresh ground pepper
  • 1 pinch smoked paprika

Slice the watermelon into small wedges and place on a tray in the freezer (if desired). In a small bowl combine the yogurt, lemon and lime juice and the desired amount of fresh chopped cilantro. Stir in the honey and add more citrus juice or cilantro to taste. Pour into a resealable container and refrigerate until ready to use. In a small bowl combine the salt, cayenne, pepper and paprika and stir until thoroughly mixed. Place the watermelon wedges on a large plate or platter and lightly dust with the spice mixture, top with a generous drizzle of  citrus and cilantro yogurt and garnish with additional fresh chopped cilantro. Enjoy immediately!

These watermelon wedges are great fresh or frozen…and I’m sure you could even soak them in vodka before serving, way better!
