Super Grain & Seed Breakfast Mix with Yogurt and Minted Greens

When I don’t have any granola on hand, this is my go to breakfast mix.  It can be made on the spot right in your breakfast bowl, or made in bulk ahead of time and conveniently stored in your refrigerator for daily use.  It’s a sort of deconstructed granola, if you will, that doesn’t require baking.

Throw in some seasonal fruit and fresh herbs and you’ve got yourself a filling and balanced breakfast like no other!

Super Grain & Seed Breakfast Mix with Yogurt and Minted Greens

  • 1/2 cup vanilla yogurt
  • 1 tablespoon rolled oats
  • 1/2 tablespoon chia seeds
  • 1/2 tablespoon hulled hemp seeds
  • 1/2 tablespoon buckwheat
  • 1/2 tablespoon dried cranberries
  • 1 teaspoon flax seeds
  • 1/4 cup fresh fruit
  • 1 tablespoon fresh chopped mint
  • 1 pinch sprouts or pea shoots
  • 1/2 tablespoon honey (optional)

Combine the oats, seeds, buckwheat and dried cranberries in a small bowl and stir to combine.  Add the yogurt, fresh fruit, mint, greens and a drizzle of honey (if desired).  Stir and enjoy!
