In preparation for Christmas holidays I’ve been fooling around with all sorts of different breakfast recipes. I found this dish with traditional Turkish eggs and decided to throw some of my favorite ingredients into the mix; cayenne pepper and avocado! Hope you enjoy…
Turkish Eggs with Garlicky Avocado Yogurt and Paprika Butter (adapted from Honestly Yum)
- 1 large egg
- 1/4 cup Greek yogurt
- 1/2 avocado
- 1 small garlic clove
- 1 pinch fresh minced thyme (optional)
- 1 tablespoon butter
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon smoked paprika
- Fresh ground salt and pepper
Combine the yogurt, avocado, garlic and cthyme in a food processor and puree until smooth and creamy. Spoon into a small bowl and set aside until ready to use. Bring a pot of water to boil with a splash of vinegar and gently crack the egg into the water, stirring occasionally. Cook for 2-3 minutes, remove with a slotted spoon and place on top of the yogurt mixture. In a small saucepan, melt the butter and stir in the cayenne pepper and paprika. Stir until the butter is completely melted and bubbling.
When plating, drizzle the hot paprika butter over the poached egg and season with salt and pepper. Top with additional chopped thyme and serve with toast points!
